Zucchini Noodles with Arrabbiata Sauce

Replacing traditional pasta with healthy and delicious zucchini noodles is one way to get more vegetable in your diet. More vegetables means a healthy body weight and blood pressure. Vegetables are also a carbohydrate that won’t raise your blood glucose.

la grande bouffeWondering what arrabbiate sauce is? It is a spicy sauce for pasta prepared with garlic, tomatoes, and dried red chili peppers cooked in olive oil.

It is traditionally served with rigatoni or penne noodles, but with this recipe it is paired with tender spaghetti-like zucchini noodles.

The sauce originates from the Lazio region, around Rome.  Arrabbiata literally means “angry” in Italian. The name of the sauce refers to the spiciness of the chili peppers.

The dish has been celebrated several times in Italian movies, notably in Marco Ferreri’s La Grande Bouffe and Federico Fellini’s Roma.

If you’d like to save a little time, you can use prepared arrabbiata sauce. However, you can make your own from scratch in less than half an hour or you can make large batches in advance and freeze the rest for easy weeknight meals.

Kitchen Tip – When Handling Chili Peppers

To avoid the burning feeling when handling chili peppers it is recommended to wear gloves. If, however, you skip this step and find your hands burning, don’t despair!

The capsaisin that makes peppers hot breaks down better if you apply oil – NOT Water!!  Therefore, coat your hands in avocado or olive oil.

Also if the capsaisin burns your tongue, drink a little milk to coat it and the burning will stop – Do Not Use Water!!

  1. Prepare the sauce by heating olive oil in a large ceramic coated skillet over medium heat. Add the crushed red pepper flakes and heat until fragrant. Reduce heat to medium-low. Next, tomato paste, tomatoes, oregano, and garlic powder. Season with salt and pepper, to taste. Simmer until sauce is slightly reduced, approximately 20 minutes, stirring occasionally.

  2. While the sauce is cooking, slice zucchini into thin, long noodles with a spiral slicer. (If using the Paderno Tri-Blade Vegetable Spiral Slicer, use the small “shredder” blade to create spaghetti-like strands).

  3. Cut the noodles with kitchen scissors once they are 10-12 inches long. Place cut noodles on paper or clean kitchen towels to absorb excess moisture and set aside. Heat olive oil and garlic in a large ceramic coated skillet over medium-high heat until the garlic turns golden brown, about 4-5 minutes. Reduce heat to medium. You may leave the garlic or remove it from the pan with a slotted spoon or fork and discard. Add the zucchini noodles to skillet and sauté for approximately 2 minutes. While cooking, use tongs to flip the noodles to ensure they are warmed on each side. Season with salt and pepper, to taste. Next, toss zucchini noodles with the warm arrabbiata sauce. Transfer to a serving dish and top with garnishes noted below, if desired. Serve immediately.

  4. Optional Garnishes either fresh Italian parsley or fresh basil, washed, dried and cut into thin slices Romano, Asiago or Parmesan cheese, freshly grated
